Fix Italian Swift enum cases that used an apostrophe as an accent (#313)

it/swift/enumerations/1.md and 2.md wrote the weekdays as lunedi', martedi',
mercoledi', giovedi', venerdi' - an ASCII stand-in for the accent. An
apostrophe is not valid in a Swift identifier, so neither exercise could
compile and neither could be solved.

Verified against the codecompiler container: 'case lunedi'' gives
'error: expected declaration', while 'case lunedi' with the accent compiles and
prints venerdi. Fixed to the accented forms across --seed--, --answers-- and
--solutions-- together, so the type-2 token mapping still lines up.

Validator passes 270276 tests.
